How to make an awesome Caffe Latte

Being semi-Italian, I am exposed to a world of tasty things. One of the tastiest and my favourite is Caffe Latte.


This is how I make it.

What you'll need:

A mug
A microwave
Milk
Sugar
A coffee/espresso machine of sorts or instant coffee


Instructions:


Fill your mug with milk, full cream works best and is tastier than any other milk. Make sure to leave enough space for a single (or double) espresso should you be using espresso. Otherwise fill it up if you're using instant coffee.

Place your mug of milk into the microwave for about  one and a half minutes. It needs to be piping hot to reach your desired result, but keep an eye on it so it doesn't boil over.

Once your milk has been heated, add your desired amount of sugar. In my case, three. Stir vigorously. 
If you are using instant coffee, this would be the time to drop it in. Once you have stirred up your instant coffeee and sugar you're good to go!

Now comes the fun part. I use a Nespresso machine, which rules the world. Keep stirring the milk while the coffee is being filtered into your mug. You'll see it change colour and become tasty.

Once the coffee is done filtering you can stop stirring... You will then have a creamy, frothy caffe latte. It's a winner for movie nights with your better half and just in general. Enjoy.

Easy To Make Spaghetti Parmiggiano

I know a lot of people who live alone or with friends and suck at cooking. So it is from my heart that I am posting this recipe. It's an easy meal to make which pretty much involves cooking pasta... that's about it. Let's do it!


What you'll need


Pasta of your choice
Salted butter
Parmesan cheese


Step 1


Make sure you have nice pasta, Fatti's and Moni's is not good pasta...




Once you have chosen your favoured type of pasta, bring a pot of water to boil. Add about a tablespoon of salt to the water before it boils.
Once the water is boiling, smash your pasta and cook for as long as the pack says.





Once the pasta is cooked, drain it and place it back into the pot.




Rad. Now cut 2-3 slices of butter about half a centimetre thick and mix it into the pasta.




Butter should now be melted. Take your Parmesan cheese and grate it over the buttered pasta. This is where it gets cool because you are the decider of the amount of cheese. Mix the grated cheese in to melt a bit.




Awesome, now serve up and eat up! Easy, tasty pasta.

Homemade Banana Bread.

 Banana Bread

  • Prep time: 5 minutes
  • Cook time: 1 hour

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 4 Pods of fresh vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour  


Get to it
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and freshly scraped vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

We used fresh Vanilla pods here, Ricks mom and dad bought them back from Madagascar. They have the most incredible taste! Believe it or not, raw Vanilla smells kinda weird, not like the taste at all! So if you can't get fresh vanilla, you can use vanilla essence too (+-2 teaspoons).

Grimaldi’s

I found this whilst stumbling and decided that oneday i will take rick on a date to Grimaldi's, one of the best places to eat pizza in New York! Go check out this link for more cool places!


Considered to be a competitor of Lombardi’s for the title of ‘best pizza in New York’, there are several Grimaldi’s in Manhattan and the surrounding boroughs. Apparently its the pizza in town and only sell full pizza's, no slices.

I need to know more so I did a bit more digging

Clicked on Brooklyn New York for pizzeria location (obviously!!!),
and this is what they had to say:

I even managed to get a menu!

eggplant, aubergine, melongene, brinjal.

Eggplant, Aubergine, Melongene, Brinjal. Different names for one delicious veg.
Let's just stick to Aubergine, cause it's what i use :) Plus, it's the name of a pretty colour!

So Ricks dad grows them in his garden and gave one to rick to give to my parents.
Its was HUUUUGE! But now... how to cook the damn thing?
I took a stab at it last night and even made up my own recipe, it was damn delicious (I was even surprised!)

Did you guys know that Aubergines are actually classified as a berry? Nor did I! They are quite bitter so therefore not the easiest things to cook! But if you get the flavors right can be down right incredible!

So this is what I did.

I cut the Aubergine into thin slices and layed them out in a deep metal dish.

Then I put some cracked pepper, a little bit of raw salt, and LOTS of olive oil (the sucker just soaked it all up!)

I then added some sun-dried tomatoes  (and all the juicy vinegar goodness they were chilling in), diced some fresh tomatoes, added slices of red onion, fresh garlic, more olive oil and a swig of white wine vinegar. Popped them in the oven for an hour at 180 degree's.

They were a SMASH hit!

Last weekend at Tonys.

SO, here's the story from my side.

Rick and I went to lunch and needed somewhere close to his house, so we popped into Tony's Spaghetti. It was a hot Saturday and we on a mission for a new shower head (the joys of getting older).

The food was delicious and i had antipasti and it was exactly what I felt like. Rick had a pizza (but of course!) but he'll be telling you about that later :) I love good food, wine, conversations.

That was the day that we came up with a business idea and that was the night that i spent setting it all up! Great things happened that day, I had the most inspiring day, it's like a lightbulb switching on, in the most amazing way.

Its amazing how good things can come from a relaxed lunch with someone you love, delicious food and glass of cold white wine.

Indi and Hayley love Suan Thai


After a little bout of charity shop hunting Hayley and myself found that we were rather quite peckish (shopping can do that to ya).


So we decided to drive around Linden and that Thai food would be the best thing for Hayleys raging hangover.

We stopped off at Suan Thai, got a nice little seat outside and met the owner Bradley, who we actually ended up chatting to right till the very end.

We started off with Tom Yum Goong. It was so delicious and tasty, its the best we've had in a while!

Thanks Brad for a great lunch, we'll be seeing you on Thursday for my birthday dinner :) And i'm drooling already.

I had the Green Thai prawn curry with cucumber with a side of rice noodles.


Hayley had a red curry with chicken and litchi's, I had a bite and it was incredible, I may have had slight food eny!

Most beautiful looking dish ever! For R50 it fed 2 of us and it was DELICIOUS!

The soup stall at Market on Main! We bought the pomegranate soup! It was INCREDIBLE!
This is a must must buy... but i reckon any of their soups are probably winners! X

Ginger tea!






Next time you want a cup of tea, cut up a few slices of fresh ginger and pop it in with the tea bag. I use five roses and even add a smidge of milk. One of my best-ests Hayley became addicted to ginger tea while in India... and it seems she has passed on the love.

Valentines day Pizza


Ok ok, so maybe not the most delicious looking picture. But DAMN was it good! Valentines day consisted of Rick and i, watching movies and eating pizza. My two favourites!

I was pleasantly surprised with Tony's Spaghetti pizza with baby marrow. I really didnt think marrow would be nice on a pizza... i was so wrong. It's totally a favourite of mine now.

Home grown salad with all sorts of surprises!



This is a tasty salad we made from lettuce grown in my dad's garden. We added all sorts of chopped up greatness such as celery, apple, cucumber, tomato, spring onion, carrot, artichoke hearts and feta cheese, obviously! All sprinkled with olive oil and balsamic vinegar. Mmm... Do I really need to tell you how tasty it was?

Our weekend in food.



Fresh tomato sauce that Ricks dad made with Enoki mushrooms that we bought from Impala. Amazing!
























Grapes from Impala! R20 bucks a KILO! We were super ampt! But ended up walking out with figs, red grapes and red grape juice. Yum!

















HERBS! It smelt incredible! We didn't need any but thought it needed a picture at least!

















Tasty tasty salad. Crisp lettuce and juicy fresh figs with huge chunks of feta (added later)! We added a sneaky slug of Ricks moms special olive oil brought straight from her family's olive farm just outside Rome.
